Kleinur (Icelandic Doughnuts)

Ingredients
- 1 c. sugar
- ½ c. shortening (butter or margarine or combination)
- 3 eggs
- 2 tsp. ground cardamom
- 1 c. milk
- 1 tsp. salt
- 2 tsp. baking powder
- 4 ½ c. flour
Procedure
Cream sugar and shortening; add the eggs and cardamom. Sift the baking powder, salt, and flour. Add flour mixture and milk alternately to the creamed mixture. Keep dough soft (don’t overbeat). Turn out on a floured board and knead lightly. Roll out to 1/4- to 1/3-inch thickness. Cut into 1 ½ x 2 ½ -inch diamond shapes. Cut a slit, about 1½ inches, lengthwise in center and bring the point of the diamond through, making a twist. Chill for 30 to 60 minutes. Deep-fry in hot oil (375º) until golden brown, turning once.

- 2 ½ c. flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- ½ tsp. salt
Procedure
Cream sugar and shortening; beat in the eggs. Dissolve baking soda in sour milk. Sift the flour, baking powder, salt, cinnamon, and nutmeg together. Add flour mixture and milk alternately to the creamed mixture. Keep dough soft (don’t overbeat). Turn out on a floured board and knead lightly. Roll out to 1/3-inch thickness. Cut into 1 x 4-inch diamond shapes. Cut a 2-inch slit lengthwise in center and bring the point of the diamond through, making a twist. Chill for 30 to 60 minutes. Deep-fry in hot oil (375º) until golden brown, turning once.
