Icelandic Pancakes - Pönnukökur

Using coffee in the mix as a variation on traditional recipes.
Ingredients

1 cup flour
-
2 tsp. baking soda
-
2 tsp cinnamon
-
1 ½ cup milk
-
2 Tbls. Soft butter
-
Touch of salt
-
3 eggs
-
3 Tbls. STRONG coffee
Procedure
-
Pre-heat a pönnukökur griddle or small frying pan on medium high heat.

Reduce heat to medium.

Pour a very thin pancake (3-4 Tbls. of batter).
-
Flip when underside is brown.
