A traditional vanilla cookie, this buttery treat is light and crisp with just a hint of sweetness.
Ingredients

1 1/4 cup sugar

1 1/2 cup butter, softened

1 egg

2 Teaspoon Vanilla Extract

3 1/3 cup Flour

1/2 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda
Procedure

Cream butter and sugar. Add egg and vanilla and mix thoroughly.

Add flour, baking powder and baking soda stirring until blended completely. Divide into three balls, wrap each in plastic wrap and refrigerate for at least an hour.

Preheat oven to 325° F

When chilled, roll out dough on lighted floured surface, working with one section at a time. Dough will be easier to work with before it warms.

Cut into rounds using cutter and transfer to non-stick baking tray lined with non-stick paper.

Cut a slit in each cookie and separate center make center hole. Use fork to create lined design or use line-embossed rolling pin for design.

Bake for 12-14 minutes or until brown. Remove from oven and cool on wire racks.
Yields approximately 72 cookies
